Chinh, alias Romeo, co-founder and co-owner of the place is an artist at heart and he exercises his creativity in the kitchen as much as on the paintings that adorn the walls of the restaurant. He even goes so far as to invent original sushi, including the surprising Romeo and Juliet made with shrimp, blueberries, pineapple and strawberries.

What does Sho-dan mean?
The word “Sho-dan” has a double meaning in Japanese. The first is “welcome home”; while, in the context of martial arts, this word refers to the first degree of black belt. This perfectly reflects Sho-dan’s philosophy: a concern for excellence harmonized with the feeling of being welcomed at home. Like the black belt level, Sho-dan represents excellence.
