Spark Beer opened in 2020 with a goal to produce and serve the best hoppy, sour and Belgian influenced beers possible. Owners Andrea and John have lived in and around Chinatown for over 20 years and, after seeing the ‘for rent’ sign at 702 Somerset Street West, knew they found the home of Spark Beer. We brew beer using modern techniques, but with some classic Belgian flair.
The majority of our sour beers are aged for over four months. Our oak barrel and foeder releases are also aged from four to eighteen months. We release beers when they’re ready and not a day sooner.
We use as many local ingredients and possible and are working to increase that amount each time we brew. Currently, we work with Mississippi Mill Malting for the majority of our malts. We also source some of the best Cascade and Centennial hops from Houblons Pontiac to produce a few of our favourite beers.
